A healthy snack for the night
Everybody knows it is not advisable to go to the supermarket when hungry. Besides buying more than you intended or needed, you also tend to buy more caloric foods. Definitely a risky thing.
But sometimes we just have some minutes between office and home to go there. That’s life. And there I was, tired and hungry and feeling that fierce temptation to buy piles of ultraprocessed foods like mortadella and frozen pizza or lasagna.

But in something like a sudden insight of enlightenment I felt the fresh flavor of cucumber and ginger into my mouth.
A simpler and fresher variation of the japanese style cucumber and ginger pickles recipe. And easier to prepare too:
- Wash thoroughly one or two japanese cucumbers and cut them into slices.
- Cover with picked ginger slices (I always bought some ready to use)
- You can now pour a mix of olive oil and apple cider vinegar to taste
- As an option, sprinkle the cucumbers with some toasted sesamum seeds
